Simple Salmon Cakes

This recipe gets 4 stars from me!

4 servings

1 6-oz. pouch salmon
¼ c. finely chopped green onion
¼ c. mayonaise
1 tablespoon lemon juice
½ teaspoon garlic powder
dash cayenne pepper
¼ c. finely chopped red bell pepper
¼ teaspoon season salt
1 egg, beaten
1 c. seasoned bread crumbs
3 tablespoons butter for frying

Combine salmon, onions, mayo, lemon juice, garlic powder, cayenne, season salt, bell pepper.  Add egg and 1/3 cup bread crumbs (may need more to hold together).

Form into 4 balls.  Roll balls in the remaining breadcrumbs; flatten into cakes about ½ inch thick.  Melt butter in skillet on medium heat.  Fry 3-4 minutes on both sides or until golden brown.
Fiesta Salad Turnover

This resembles a giant taco!

6 servings

Crust
1 pkg. refrigerated pizza crust
½ c. grated Colby-Jack cheese blend

Jalapeno-Lime Dressing
1  jalapeno pepper, seeded and finely chopped
2 tablespoons fresh cilantro, chopped
½ lime
½ c. sour cream

Filling
2 small plum tomatoes equal to ½ cup, seeded and diced
½ c. pitted ripe olives, sliced
1 lb. lean ground beef, cooked, crumbled and diced
¾ c. salsa
2 tablespoons taco seasoning
1 garlic clove, pressed
½ c. grated Colby-Jack cheese blend
1½ c. shredded lettuce

Preheat oven to 425°F.

1. Crust - Unroll pizza dough on large round pan.  Lightly spray dough with cooking spray; sprinkle with cheese.  Bake 13-15 minutes.  Remove from oven; immediately loose crust and flip over.  Press down in center and fold in half to form a large taco shape.  Set aside.

2. Dressing - Finely chop jalapeno and cilantro together, put in blender; add juice of lime and sour cream.  Process till all blended.  Set aside.

3. Filling - combine cooked meat, salsa, taco seasoning and garlic; mix well.  Microwave on High 3-4 minutes.  Stir in cheese.

4. Open crust; spread half of dressing over bottom half of crust.  Top with meat.  Sprinkle with lettuce, tomatoes and olives.  Drizzle with remaining dressing.  Cut with a serrated knife.

I've only fixed this one time but it was good.



 Apple Onion Saute

When I first came across this recipe I thought no way this could be good.  But I decided to try it and I'm glad I did.  This is so good and very easy to fix.

3-4 servings

2 medium onions, sliced
1 tablespoon brown sugar
2 tablespoons butter
2 large tart apples, peeled and sliced
¼ teaspoon salt
1/8 teaspoon white pepper

In skillet, cook onions and brown sugar in the butter over medium-low heat until onions are tender, about 8 minutes.

Stir in apples, salt and pepper; cover and simmer 10 minutes till apples are tender.


Brown Sugar-Glazed Salmon

I give this one 4 stars.

4 servings

1 pound salmon fillets
¼ teaspoon black pepper
1 tablespoon soy sauce
1 teaspoon rice wine vinegar
¼ teaspoon salt
3 tablespoons brown sugar
4 teaspoons Dijon mustard

Cut salmon width-wise into four (4) pieces.  Place in a foil-lined baking pan; sprinkle with salt and pepper.  Bake, uncovered, at 425°F. for 10 minutes.

Meanwhile in a small saucepan combine the brown sugar, soy sauce, mustard and vinegar.  Bring to a boil.

Brush evenly over salmon.  Broil 6 inches from heat for 1-2 minutes.

Strawberry Pie

Very Good.

Mix together:
2 8-oz. cartons strawberry yogurt
1 package strawberry sugar-free jello
½ container small cool whip

Pour into a graham cracker crust.  Freeze.

This pie is also good with other flavors of yogurt and jello to match.





Baked Sweet Potato Fries

These fries are great, especially with the dipping sauce that follows.

6 servings

3 sweet potatoes, peeled, cut into narrow wedges
2 tablespoons oil
1½ teaspoons Kosher salt
¼ teaspoons black pepper

Heat oven to 450°.  Gently toss potatoes, oil, salt and pepper in a ziplock bag, shake well to coat evenly.  Bake 30 minutes or till brown and tender.  Serve with Spicy Apricot Dipping Sauce.


Spicy Apricot Dipping Sauce

1 c. apricot jam
¼ c. orange juice
1 tablespoon prepared mustard
¼ teaspoon ground red pepper

Melt jam in a small saucepan over medium-high heat.  Whisk in orange juice, mustard and red pepper.  Puree in food processor.  Serve with Baked Sweet Potato Fries.

The barbecue chicken was sooo good!  You've got to try the recipe for the barbecue chicken.

I fixed the following Corn Salad to go with the chicken.  It's a new recipe.  I actually had all the ingredients it calls for, so I fixed it and it's good.  We also had boiled cabbage and cornbread.  It was a scrumptious meal.

Corn Salad

2 cans whole kernel corn, drained
¾ cup diced cucumbers
¼ cup diced onion
2 small tomatoes, chopped
¼ cup sour cream
2 tablespoons mayonnaise
1 tablespoon vinegar
½ teaspoon salt
¼ teaspoon dry mustard
¼ teaspoon celery salt

Combine corn, cucumbers, onions and tomatoes in salad bowl. Blend sour cream with mayonnaise. Add remaining ingredients. Add sour cream mixture. Toss gently to coat vegetables. Chill corn salad thoroughly. 
Zesty Slow Cooker Chicken Barbecue

This is one of the best BBQ recipes.  One day I'm gonna try it with beef or pork!

6 frozen skinless, boneless chicken breast halves
12 oz. bottle (or 1½ cups) bottled barbeque sauce
½ cup Italian salad dressing
¼ cup brown sugar
2 tablespoons Worcestershire sauce

Place chicken in slow cooker.  In a bowl, mix the other ingredients and pour over the chicken.  Cover.  Cook 3-4 hours on high or 6-8 on low.

MMMM gonna be a good supper tonight!

Popeye's Delight

This is one of our favorite recipes.

1 lb. hot sausage
1 can cream of mushroom soup
10 oz. pkg. frozen chopped spinach
1½ c. (6 oz.) pasta
1½ c. grated cheese

Crumble and cook sausage, drain.  Cook spinach, drain well. Cook pasta, drain.  Combine all ingredients except cheese in a 9x13 in. pan.  Top with cheese.

Bake uncovered at 350°F. 25-30 minutes.
Chunky Chicken Vegetable Soup

½ lb. chicken breasts, cubed
1 tsp. oil
1 can low sodium chicken broth
1½ c. water
10 oz. package frozen mixed vegetables
1 envelope Good Seasons Italian Dressing Mix
½ c. uncooked Minute rice
2 tsp. parsley

Cook chicken in oil till brown.  Add broth, water, vegetables and dressing mix.  Bring to boil, reduce, cover and simmer 5 minutes.  Stir in rice and parsley, cover.  Remove from heat, let stand 5 minutes.

Neiman Marcus Cookies

This makes a lot of cookies but a soooo good!

2 cups butter
2 teaspoons soda
5 cups oatmeal***see below
2 cups brown sugar
8 oz. Hershey bar, grated
2 teaspoons baking powder
3 cups chopped nuts
4 cups flour
2 cups sugar
24 oz. chocolate chips
1 teaspoon salt
4 eggs
2 teaspoons vanilla

***Measure oatmeal then put in blender and blend to a fine powder.

Cream butter and sugars.  Add eggs, vanilla; mix dry ingredients into the wet ingredients.  Add remaining ingredients.  Roll into balls, place 2" apart on baking sheet.  Bake 10 minutes on 375°F.

Makes 10 dozen cookies
Minestrone in Minutes

3 cans (13¾ oz. each) reduced sodium, fat free chicken broth
1 can Italian seasoned diced tomatoes
1 medium potato, diced
1 medium onion, chopped
2 large garlic cloves, minced

2 medium zucchini, quartered lengthwise then sliced crosswise
1 cup uncooked small pasta or ditalini
½ teaspoon black pepper

1 can kidney beans, rinsed and drained

Bring the first five ingredients together in a large pot and bring to a boil; then cover and simmer 5 minutes. 

Add the next 3 ingredients; simmer, covered, 10 minutes.

Add the beans, simmer 3 minutes till the pasta and vegetables are tender.
Oriental Salad

2 packages beef flavor Ramon noodles
1 cup salted sunflower seeds
1 cup slivered almonds
1½ bundles green onions, chopped
1 package shredded slaw cabbage

Crunch noodles in package.  Mix all dry ingredients. 

Mix in a bowl ¾ cup vegetable oil, ½ cup sugar, 1/3 cup white wine vinegar, the two seasoning packets from the noodles; mix well.  Pour over slaw mixture.

Makes a lot even if you half the recipe.  Good for large crowd.
Mustard Chicken

1 cup lowfat ranch dressing
2 tablespoons Dijon mustard
4 oz. chopped green chilies
1 tablespoon olive oil
1 red bell pepper, cut in strips
1 medium onion, chopped
1½ lb. chicken breasts, cut in strips

Whisk together dressing, mustard, chilies.  Heat oil.  Add onion, red pepper and stir fry 3 minutes.

Add chicken, fry 5 minutes or till done.  Add dressing, cook till hot.

Great served on rice.

Roast Sticky Chicken Spices

This is the best recipe for roasted chicken ever!

 4 teaspoons salt
2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon onion power
1 teaspoon thyme
1 teaspoon white pepper
½ teaspoon garlic powder
½ teaspoon black pepper

Mix together.  Sprinkle on meat and roast till done.

This also works well on beef and pork.
Lasagna Soup

1 pound ground beef
½ cup chopped onion
1 Lasagna Hamburger Helper
5 cups water
1 can diced tomatoes, undrained
7 ounces whole kernal corn
1 small zucchini, chopped

In Dutch oven, cook beef and onion; drain.  Add contents of lasagna sauce mix, water, corn and tomatoes; mix well; bring to a boil.  Reduce heat; cover and simmer 10 minutes, stir occasionally.  Add lasagna noodles and zucchini.  Cover and simmer 10 minutes or till noodles are tender.

Serve immediately.

Makes 10 servings
Chicken Stuffing (Crockpot Meal)

1 box chicken stuffing mix
2-3 cups cooked cubed chicken
1½ cans cream of chicken soup
¼ cup milk
1 cup grated cheddar cheese

Spray crockpot with cooking spray.  Prepare stuffing as directed and place in crockpot.  Stir in 1 can soup.

In a bowl, mix chicken, ½ can soup and milk.  Spread over stuffing and put cheese on top.  Cover and cook Low 4-6 hours or High 2-3 hours.

4-6 servings

This is good.

Peanut Butter Oaties

1 cup sugar
1 cup peanut butter
2 eggs
½ teaspoon baking soda
2 cups oatmeal
1 cup brown sugar
1 cup butter
2 teaspoon vanilla
1¼ cup flour

Heat oven to 350°F.  Cream sugars, peanut butter, butter.  Add eggs, vanilla, mix well.  Stir in the dry ingredients.  Cover and chill. 

Shape into 1 inch balls.  Place 2 inches apart on baking sheet.  Flatten with fork dipped in sugar.  Bake 12 minutes.

5 dozen cookies
Homemade Salsa Chicken

This is very good!

1 lb. chicken breasts cut in strips
2 tablespoons oil
1 package taco seasoning
1 can diced tomatoes
1/3 cup peach preserves

Empty taco seasoning in ziplock bag, add chicken strips and shake to coat.  Heat oil over medium heat.  Add chicken and saute 5-7 minutes or until done.  Stir in tomatoes and preserves.  Cover and simmer 10 minutes.
Hamburger-Cabbage Casserole

1 lb. lean hamburger
1 cup chopped onion
½ cup instant rice, uncooked
½ teaspoon salt
½ teaspoon black pepper
1 can tomato soup
¼ cup water
4 cups shredded cabbage or coleslaw mix

Cook beef and onion; drain.  Stir in remaining ingredients.  Spoon in to ungreased 2 quart casserole.  Cover; bake on 400°F. and bake 45 minutes.

Simple and Delicious Swiss Steak

I made this recipe for years before my husband told me he didn't like it.  Well I still like it and I still fix it every now and then.

Place 6 (4 to 5 ounces each) beef cubed steaks in a 9x13-inch pan.  Combine 1 can stewed tomatoes and ¼ cup all-purpose flour in a 2-quart saucepan.  Stir in 1 jar of Heinz HomeStyle Mushroom Gravy and ½ cup Heinz Chili Sauce.  Bring to a boil; simmer 1 minute.  Pour sauce over steaks.  Cover; bake in 375°F. oven 35 to 45 minutes.  Serve with hot mashed potatoes or noodles.

Makes 6 servings.
Garlic Cheese Grits

These are the best grits I've ever had.

1 cup cooked grits, should equal 4 servings
1 roll garlic cheese
1 stick butter, melted
2 eggs, broken in a 1 cup measure and stirred then add enough milk to fill cup
Black pepper
Paprika
1½ cups grated cheddar cheese

Cook grits according to box directions.  Add sliced garlic cheese stirring to melt cheese.  Add butter and egg a little at a time, mixing well.

Pour into greased 8x8 inch pan and cook at 350°F. for 40 minutes.  Remove from oven and sprinkle with black pepper, paprika and grated cheese.  Put into oven and cook for 20 minutes.

Texas Fieldhand Chili

This makes a crockpot full to the top!

Saute 1½ lbs. lean ground meat and 1 large chopped onion together till meat is no longer pink.

In large bowl mix meat and the following:

1 can ranch style chili beans
1 can pinto beans
1 can ranch style beans with jalepenos
1 can diced Rotel tomatoes
1 can stewed tomatoes
1 can whole kernal corn
1 package dry ranch dressing mix
1 package taco or chili seasoning

Mix well.  Put in crockpot and simmer 6-8 hours on low.
Grilling Marinade


½ cup Soy Sauce
1 tablespoon plus 1½ teaspoon brown sugar
1/3 cup orange juice
1½ teaspoon honey
1 tablespoon oil
1/8 teaspoon garlic powder
1 teaspoon minced onion
¼ teaspoon ginger

Combine all ingredients in a small sauce pan.  Heat to a boil.  Let cool completely.  Marinade meat 2-3 hours.

Spanish Meatballs (with a story)

 I can tell this story today and laugh but at the time my husband and I thought we were going to die.

Back in 1979 our daughter was little.  There was a little hamburger joint in the town next to where we lived that had awesome burgers and root beer in ice cold mugs like A&W used to have.  We decided to drive over there for lunch.  We ordered burgers and root beers and since our daughter was just learning to eat regular food we ordered her a grilled cheese.  It was a drive-in so we ate in the car.

Now before we went to the hamburger joint I had made a pot of these Spanish Meatballs to take that evening to a Sunday School party; left them on the stove to cool down while we were gone.

We ate our lunch and went back home.  My husband and I both started feeling bad on the way back.  By the time we got home we were both sick as dogs.  And then we walked into the house and the smell from the meatballs, well let me just say it didn't make us feel better.  We called my parents to come get the baby and the meatballs.  We decided we must have had food poisoning cause the baby wasn't sick cause she had a grilled cheese sandwich.  Luckily we had 2 bathrooms in our house so we each took one, even lying on the floor so we'd be close to the toilets.  We called our doctor and left messages several times to see if there was anything he could give us but we never heard from him, found out the next day his answering service kept giving him the wrong names.

Anyway, we rode out the night on the bathroom floors and survived.  My parents had a lot of meatballs to eat!  I didn't make these meatballs again for a long time, just couldn't get the smell of walking into the house sick and smelling them out of our minds (noses actually, lol).

These are very good and you can add more spice but try it this way first just in case it's spicy enough.

Here's the recipe:

Heat the following in a big pot -

1 can tomatoes
1 can tomato soup
1 can water to rinse out the soup can
1 teaspoon red pepper
1 chopped onion
Salt and pepper to taste
1 teaspoon chile powder

While this is heating, mix together -

1 lb. ground meat
½ lb. hot sausage, like breakfast sausage
2 teaspoon chile powder
½ cup minute rice
1 egg
1 chopped onion
¾ teaspoon salt
¼ teaspoon black pepper

Mix well; make into balls about size of egg; drop into simmering sauce and cook about an hour or until the meatballs are done.

ENJOY!

Mexican Casserole

This is our all time favorite casserole. 

Layer in this order in a 13x9 in. pan:

1 lb. ground meat, cooked
1 package taco seasoning
1 onion, chopped
6 corn tortillas cut into strips
Grated cheddar cheese to cover tortillas
1 large can Ranch Style beans with juice
6 corn tortillas cut into strips

Mix together 1 can cream of chicken soup and 1 can diced Rotel tomates.  Pour on top and top off with more grated cheddar cheese, use whatever amount you like (we like lots of cheese on ours).

Bake in 400°F. for 30 minutes or till really bubbly.  Pan will be full! 

Fruit Cocktail Cake

This cake is so easy and very good and moist.

Sift together 2 cups all purpose, 1½ cup sugar, 1 teaspoon baking soda.  Add 2 eggs, 1 teaspoon salt, 1 can fruit cocktail with juice.  Beat well.  Pour into a greased and floured 13x9 in. pan.  Bake at 300°F. for 40 minutes.  Cook icing and spread on cake.

Icing - 1 cup sugar, ½ c. canned evaporated milk, 1 stick butter.  Cook at boiling point for 2 minutes.  Stir in 1 cup chopped nuts and 1 small can of coconut.

Homemade Pasta Sauce

¼ cup oil
1½ cup chopped onion
3 cloves garlic, minced
2 cans diced tomatoes
1 6-oz. can tomato paste
1 tablespoon basil
1 teaspoon sugar

¼ teaspoon each of salt, black pepper, oregano

Heat oil, saute onions and garlic til onion is tender.  Stir in remaining ingredients.  Simmer, uncovered, 25 minutes, stirring frequently.

1 quart

Chicken Ala King

This is a great recipe for 2-3 people.  You have to serve it immediately or the soup starts thinning out.

2 boneless chicken breasts, diced
1 can cream of chicken soup
1/3 cup milk
¼ teaspoon thyme
8¾ oz. can whole kernel corn, drained
8½ oz. can peas and carrots, drained

Combine chicken, soup, milk and thyme in large skillet.  Cook on medium heat for 10 minutes or until the chicken is done, stirring occasionally.  Stir in vegetables; heat through.  Serve immediately or soup will start to thin.

2-3 servings.

Ranch Potatoes

4 medium potatoes, peeled and cut into ¼ in. slices
1 cup ranch dressing or creamy Italian (both are good)
1 teaspoon salt
¼ teaspoon black pepper
1/3 cup dry bread crumbs or Panko

Toss potatoes with dressing, salt and pepper.  Place in greased 13x9 in. pan.  Sprinkle with bread crumbs.  Cover and bake for 30 minutes on 375°F.  Uncover and bake an additional 20 minutes or until potatoes are tender.

Finally Posting!!

I'm finally getting around to posting some recipes.  I kept trying to think of which recipes I wanted to post then it hit me - my little black book of my favorite recipes.  This poor little book has been around for several years, well worn.  They are hand written, I made an index that I pasted to the front cover, each page is numbered so I could number the recipe page to know where to turn to.  Sure comes in handy.

So these will be the first recipes I post here.

Lasagna Casserole

This recipe serves 6-8 people but I usually half the recipe because it makes a lot.

1 lb. ground meat
¼ cup chopped onion
½ teaspoon salt
½ teaspoon pepper, divided
1 lb. medium shell pasta, cooked and drained
4 cups grated mozzarella, divided
24 oz. small-curd cottage cheese
2 eggs, beaten
1/3 cup Parmesan cheese
2 tablespoons parsley
26 oz. spaghetti sauce

Cook beef and onion till onion is tender and meat is cooked through; drain.  Sprinkle with salt and ¼ teaspoon pepper; set aside. 

Combine pasta, 3 cups mozzarella, cottage cheese, eggs, Parmesan cheese, parsley and repaining pepper; stir gently. Pour into a greased 13x9 in. pan or 3 quart baking dish.  Top with beef mixture and spaghetti sauce (dish will be full). 

Cover and bake at 350°F for 45 minutes.  Sprinkle with remaining mozzarella.  Bake, uncovered, 15 minutes longer or until cheese is melted and bubbly.  Let stand 10 minutes before serving.

This is really good and easy to make.

Sesame Chicken Breasts

Sauce for 4 breasts

Combine in small saucepan:

2 teaspoons toasted sesame seeds
2 tablespoons honey
2 tablespoons soy sauce
¼ teaspoons ground ginger

Stir well; heat to simmer; simmer 3 minutes.  Brush on chicken breasts while grilling.

Very good!

Hi, my name is Gay Lynn and this is my first blog post and I'm not just real sure what to say here.

I really want to post recipes here that I've either tried or want to try.  I have been collecting recipes for over 30 years.  Now just because I collect them doesn't mean I cook all of them.  Far from it!  I've just always liked to read recipes and cutting them out, this was before the internet, so I have tons of recipes and books.  I have already sold a lot of my recipes books in garage sales, recycled magazines to free up some space but found all I have done is just fill the space with more.

So if you try one of the recipes then let me know what you thought about it.  I might be kinda slow at posting recipes on here but it takes time, so bear with me.
