Peanut Butter Oaties

1 cup sugar
1 cup peanut butter
2 eggs
½ teaspoon baking soda
2 cups oatmeal
1 cup brown sugar
1 cup butter
2 teaspoon vanilla
1¼ cup flour

Heat oven to 350°F.  Cream sugars, peanut butter, butter.  Add eggs, vanilla, mix well.  Stir in the dry ingredients.  Cover and chill. 

Shape into 1 inch balls.  Place 2 inches apart on baking sheet.  Flatten with fork dipped in sugar.  Bake 12 minutes.

Homemade Salsa Chicken

This is very good!

1 lb. chicken breasts cut in strips
2 tablespoons oil
1 package taco seasoning
1 can diced tomatoes
1/3 cup peach preserves

Empty taco seasoning in ziplock bag, add chicken strips and shake to coat.  Heat oil over medium heat.  Add chicken and saute 5-7 minutes or until done.  Stir in tomatoes and preserves.  Cover and simmer 10 minutes.
Hamburger-Cabbage Casserole

1 lb. lean hamburger
1 cup chopped onion
½ cup instant rice, uncooked
½ teaspoon salt
½ teaspoon black pepper
1 can tomato soup
¼ cup water
4 cups shredded cabbage or coleslaw mix

Cook beef and onion; drain.  Stir in remaining ingredients.  Spoon in to ungreased 2 quart casserole.  Cover; bake on 400°F. and bake 45 minutes.

Simple and Delicious Swiss Steak

I made this recipe for years before my husband told me he didn't like it.  Well I still like it and I still fix it every now and then.

Place 6 (4 to 5 ounces each) beef cubed steaks in a 9x13-inch pan.  Combine 1 can stewed tomatoes and ¼ cup all-purpose flour in a 2-quart saucepan.  Stir in 1 jar of Heinz HomeStyle Mushroom Gravy and ½ cup Heinz Chili Sauce.  Bring to a boil; simmer 1 minute.  Pour sauce over steaks.  Cover; bake in 375°F. oven 35 to 45 minutes.  Serve with hot mashed potatoes or noodles.

Makes 6 servings.
Garlic Cheese Grits

These are the best grits I've ever had.

1 cup cooked grits, should equal 4 servings
1 roll garlic cheese
1 stick butter, melted
2 eggs, broken in a 1 cup measure and stirred then add enough milk to fill cup
Black pepper
Paprika
1½ cups grated cheddar cheese

Cook grits according to box directions.  Add sliced garlic cheese stirring to melt cheese.  Add butter and egg a little at a time, mixing well.

Pour into greased 8x8 inch pan and cook at 350°F. for 40 minutes.  Remove from oven and sprinkle with black pepper, paprika and grated cheese.  Put into oven and cook for 20 minutes.

Texas Fieldhand Chili

This makes a crockpot full to the top!

Saute 1½ lbs. lean ground meat and 1 large chopped onion together till meat is no longer pink.

In large bowl mix meat and the following:

1 can ranch style chili beans
1 can pinto beans
1 can ranch style beans with jalepenos
1 can diced Rotel tomatoes
1 can stewed tomatoes
1 can whole kernal corn
1 package dry ranch dressing mix
1 package taco or chili seasoning

Mix well.  Put in crockpot and simmer 6-8 hours on low.
Grilling Marinade


½ cup Soy Sauce
1 tablespoon plus 1½ teaspoon brown sugar
1/3 cup orange juice
1½ teaspoon honey
1 tablespoon oil
1/8 teaspoon garlic powder
1 teaspoon minced onion
¼ teaspoon ginger

Combine all ingredients in a small sauce pan.  Heat to a boil.  Let cool completely.  Marinade meat 2-3 hours.
