Spanish Meatballs (with a story)

 I can tell this story today and laugh but at the time my husband and I thought we were going to die.

Back in 1979 our daughter was little.  There was a little hamburger joint in the town next to where we lived that had awesome burgers and root beer in ice cold mugs like A&W used to have.  We decided to drive over there for lunch.  We ordered burgers and root beers and since our daughter was just learning to eat regular food we ordered her a grilled cheese.  It was a drive-in so we ate in the car.

Now before we went to the hamburger joint I had made a pot of these Spanish Meatballs to take that evening to a Sunday School party; left them on the stove to cool down while we were gone.

We ate our lunch and went back home.  My husband and I both started feeling bad on the way back.  By the time we got home we were both sick as dogs.  And then we walked into the house and the smell from the meatballs, well let me just say it didn't make us feel better.  We called my parents to come get the baby and the meatballs.  We decided we must have had food poisoning cause the baby wasn't sick cause she had a grilled cheese sandwich.  Luckily we had 2 bathrooms in our house so we each took one, even lying on the floor so we'd be close to the toilets.  We called our doctor and left messages several times to see if there was anything he could give us but we never heard from him, found out the next day his answering service kept giving him the wrong names.

Anyway, we rode out the night on the bathroom floors and survived.  My parents had a lot of meatballs to eat!  I didn't make these meatballs again for a long time, just couldn't get the smell of walking into the house sick and smelling them out of our minds (noses actually, lol).

These are very good and you can add more spice but try it this way first just in case it's spicy enough.

Here's the recipe:

Heat the following in a big pot -

1 can tomatoes
1 can tomato soup
1 can water to rinse out the soup can
1 teaspoon red pepper
1 chopped onion
Salt and pepper to taste
1 teaspoon chile powder

While this is heating, mix together -

1 lb. ground meat
½ lb. hot sausage, like breakfast sausage
2 teaspoon chile powder
½ cup minute rice
1 egg
1 chopped onion
¾ teaspoon salt
¼ teaspoon black pepper

Mix well; make into balls about size of egg; drop into simmering sauce and cook about an hour or until the meatballs are done.

Mexican Casserole

This is our all time favorite casserole. 

Layer in this order in a 13x9 in. pan:

1 lb. ground meat, cooked
1 package taco seasoning
1 onion, chopped
6 corn tortillas cut into strips
Grated cheddar cheese to cover tortillas
1 large can Ranch Style beans with juice
6 corn tortillas cut into strips

Mix together 1 can cream of chicken soup and 1 can diced Rotel tomates.  Pour on top and top off with more grated cheddar cheese, use whatever amount you like (we like lots of cheese on ours).

Bake in 400°F. for 30 minutes or till really bubbly.  Pan will be full! 

Fruit Cocktail Cake

This cake is so easy and very good and moist.

Sift together 2 cups all purpose, 1½ cup sugar, 1 teaspoon baking soda.  Add 2 eggs, 1 teaspoon salt, 1 can fruit cocktail with juice.  Beat well.  Pour into a greased and floured 13x9 in. pan.  Bake at 300°F. for 40 minutes.  Cook icing and spread on cake.

Icing - 1 cup sugar, ½ c. canned evaporated milk, 1 stick butter.  Cook at boiling point for 2 minutes.  Stir in 1 cup chopped nuts and 1 small can of coconut.

Homemade Pasta Sauce

¼ cup oil
1½ cup chopped onion
3 cloves garlic, minced
2 cans diced tomatoes
1 6-oz. can tomato paste
1 tablespoon basil
1 teaspoon sugar

¼ teaspoon each of salt, black pepper, oregano

Heat oil, saute onions and garlic til onion is tender.  Stir in remaining ingredients.  Simmer, uncovered, 25 minutes, stirring frequently.

1 quart

Chicken Ala King

This is a great recipe for 2-3 people.  You have to serve it immediately or the soup starts thinning out.

2 boneless chicken breasts, diced
1 can cream of chicken soup
1/3 cup milk
¼ teaspoon thyme
8¾ oz. can whole kernel corn, drained
8½ oz. can peas and carrots, drained

Combine chicken, soup, milk and thyme in large skillet.  Cook on medium heat for 10 minutes or until the chicken is done, stirring occasionally.  Stir in vegetables; heat through.  Serve immediately or soup will start to thin.

2-3 servings.

Ranch Potatoes

4 medium potatoes, peeled and cut into ¼ in. slices
1 cup ranch dressing or creamy Italian (both are good)
1 teaspoon salt
¼ teaspoon black pepper
1/3 cup dry bread crumbs or Panko

Toss potatoes with dressing, salt and pepper.  Place in greased 13x9 in. pan.  Sprinkle with bread crumbs.  Cover and bake for 30 minutes on 375°F.  Uncover and bake an additional 20 minutes or until potatoes are tender.

Finally Posting!!

I'm finally getting around to posting some recipes.  I kept trying to think of which recipes I wanted to post then it hit me - my little black book of my favorite recipes.  This poor little book has been around for several years, well worn.  They are hand written, I made an index that I pasted to the front cover, each page is numbered so I could number the recipe page to know where to turn to.  Sure comes in handy.

So these will be the first recipes I post here.

Lasagna Casserole

This recipe serves 6-8 people but I usually half the recipe because it makes a lot.

1 lb. ground meat
¼ cup chopped onion
½ teaspoon salt
½ teaspoon pepper, divided
1 lb. medium shell pasta, cooked and drained
4 cups grated mozzarella, divided
24 oz. small-curd cottage cheese
2 eggs, beaten
1/3 cup Parmesan cheese
2 tablespoons parsley
26 oz. spaghetti sauce

Cook beef and onion till onion is tender and meat is cooked through; drain.  Sprinkle with salt and ¼ teaspoon pepper; set aside. 

Combine pasta, 3 cups mozzarella, cottage cheese, eggs, Parmesan cheese, parsley and repaining pepper; stir gently. Pour into a greased 13x9 in. pan or 3 quart baking dish.  Top with beef mixture and spaghetti sauce (dish will be full). 

Cover and bake at 350°F for 45 minutes.  Sprinkle with remaining mozzarella.  Bake, uncovered, 15 minutes longer or until cheese is melted and bubbly.  Let stand 10 minutes before serving.

This is really good and easy to make.

Sesame Chicken Breasts

Sauce for 4 breasts

Combine in small saucepan:

2 teaspoons toasted sesame seeds
2 tablespoons honey
2 tablespoons soy sauce
¼ teaspoons ground ginger

Stir well; heat to simmer; simmer 3 minutes.  Brush on chicken breasts while grilling.

Very good!
