Simple Salmon Cakes

This recipe gets 4 stars from me!

4 servings

1 6-oz. pouch salmon
¼ c. finely chopped green onion
¼ c. mayonaise
1 tablespoon lemon juice
½ teaspoon garlic powder
dash cayenne pepper
¼ c. finely chopped red bell pepper
¼ teaspoon season salt
1 egg, beaten
1 c. seasoned bread crumbs
3 tablespoons butter for frying

Combine salmon, onions, mayo, lemon juice, garlic powder, cayenne, season salt, bell pepper.  Add egg and 1/3 cup bread crumbs (may need more to hold together).

Form into 4 balls.  Roll balls in the remaining breadcrumbs; flatten into cakes about ½ inch thick.  Melt butter in skillet on medium heat.  Fry 3-4 minutes on both sides or until golden brown.
Fiesta Salad Turnover

This resembles a giant taco!

Crust
1 pkg. refrigerated pizza crust
½ c. grated Colby-Jack cheese blend

Jalapeno-Lime Dressing
1  jalapeno pepper, seeded and finely chopped
2 tablespoons fresh cilantro, chopped
½ lime
½ c. sour cream

Filling
2 small plum tomatoes equal to ½ cup, seeded and diced
½ c. pitted ripe olives, sliced
1 lb. lean ground beef, cooked, crumbled and diced
¾ c. salsa
2 tablespoons taco seasoning
1 garlic clove, pressed
½ c. grated Colby-Jack cheese blend
1½ c. shredded lettuce

Preheat oven to 425°F.

1. Crust - Unroll pizza dough on large round pan.  Lightly spray dough with cooking spray; sprinkle with cheese.  Bake 13-15 minutes.  Remove from oven; immediately loose crust and flip over.  Press down in center and fold in half to form a large taco shape.  Set aside.

2. Dressing - Finely chop jalapeno and cilantro together, put in blender; add juice of lime and sour cream.  Process till all blended.  Set aside.

3. Filling - combine cooked meat, salsa, taco seasoning and garlic; mix well.  Microwave on High 3-4 minutes.  Stir in cheese.

4. Open crust; spread half of dressing over bottom half of crust.  Top with meat.  Sprinkle with lettuce, tomatoes and olives.  Drizzle with remaining dressing.  Cut with a serrated knife.

I've only fixed this one time but it was good.



 Apple Onion Saute

When I first came across this recipe I thought no way this could be good.  But I decided to try it and I'm glad I did.  This is so good and very easy to fix.

3-4 servings

2 medium onions, sliced
1 tablespoon brown sugar
2 tablespoons butter
2 large tart apples, peeled and sliced
¼ teaspoon salt
1/8 teaspoon white pepper

In skillet, cook onions and brown sugar in the butter over medium-low heat until onions are tender, about 8 minutes.

Stir in apples, salt and pepper; cover and simmer 10 minutes till apples are tender.


Brown Sugar-Glazed Salmon

I give this one 4 stars.

4 servings

1 pound salmon fillets
¼ teaspoon black pepper
1 tablespoon soy sauce
1 teaspoon rice wine vinegar
¼ teaspoon salt
3 tablespoons brown sugar
4 teaspoons Dijon mustard

Cut salmon width-wise into four (4) pieces.  Place in a foil-lined baking pan; sprinkle with salt and pepper.  Bake, uncovered, at 425°F. for 10 minutes.

Meanwhile in a small saucepan combine the brown sugar, soy sauce, mustard and vinegar.  Bring to a boil.

Brush evenly over salmon.  Broil 6 inches from heat for 1-2 minutes.

Strawberry Pie

Very Good.

Mix together:
2 8-oz. cartons strawberry yogurt
1 package strawberry sugar-free jello
½ container small cool whip

Pour into a graham cracker crust.  Freeze.

This pie is also good with other flavors of yogurt and jello to match.





Baked Sweet Potato Fries

These fries are great, especially with the dipping sauce that follows.

6 servings

3 sweet potatoes, peeled, cut into narrow wedges
2 tablespoons oil
1½ teaspoons Kosher salt
¼ teaspoons black pepper

Heat oven to 450°.  Gently toss potatoes, oil, salt and pepper in a ziplock bag, shake well to coat evenly.  Bake 30 minutes or till brown and tender.  Serve with Spicy Apricot Dipping Sauce.


Spicy Apricot Dipping Sauce

1 c. apricot jam
¼ c. orange juice
1 tablespoon prepared mustard
¼ teaspoon ground red pepper

Melt jam in a small saucepan over medium-high heat.  Whisk in orange juice, mustard and red pepper.  Puree in food processor.  Serve with Baked Sweet Potato Fries.

The barbecue chicken was sooo good!  You've got to try the recipe for the barbecue chicken.

I fixed the following Corn Salad to go with the chicken.  It's a new recipe.  I actually had all the ingredients it calls for, so I fixed it and it's good.  We also had boiled cabbage and cornbread.  It was a scrumptious meal.

Corn Salad

2 cans whole kernel corn, drained
¾ cup diced cucumbers
¼ cup diced onion
2 small tomatoes, chopped
¼ cup sour cream
2 tablespoons mayonnaise
1 tablespoon vinegar
½ teaspoon salt
¼ teaspoon dry mustard
¼ teaspoon celery salt

Combine corn, cucumbers, onions and tomatoes in salad bowl. Blend sour cream with mayonnaise. Add remaining ingredients. Add sour cream mixture. Toss gently to coat vegetables. Chill corn salad thoroughly.
